Recipe of the month: Caffè Negro Mimosa Cake

Happy March 8th! All women would surely be delighted to receive a beautiful bouquet of mimosas, but we're sure they'd also love a delicious slice of cake. Mimosa cake is a classic, but we at Caffè Negro offer it in an equally delicious and original version.

Ingredients for 8-10 people

  • • 5 eggs
  • • 180 g sugar
  • • 180 g flour
  • • 30 g bitter cocoa powder
  • • 250 g mascarpone
  • • 200 g fresh whipping cream
  • • to taste hazelnut cream (Nutella)
  • • 3 cups of Caffè Negro (buy it here)


Procedure

1 - Making the cocoa sponge cake: Beat the eggs and sugar until the mixture is light and fluffy. Combine the cocoa and flour, then use an electric mixer to whisk the sifted flours into the eggs a little at a time, incorporating them with two forks. Incorporate as much air as possible, which will make the sponge cake fluffy and high. Once finished, pour the batter into a greased 24/26 cm pan and bake in a preheated oven at 180°C (350°F) for about 30-40 minutes. Always check with a toothpick before removing from the oven.

2 - Unmold the sponge cake and let it cool completely. Meanwhile, prepare the cream: whip the cream with a generous tablespoon of Nutella until smooth. Separately, pour half a cup of strong coffee into the mascarpone and whip, combining the two creams with a wooden spoon. At this point, the cream is ready.
If you prefer it sweeter, add more Nutella.

3 - Cut the sponge cake into 3 equal discs. Also cut the dome off the top disc, then cut into cubes. Now prepare the syrup by mixing 2 more cups of coffee with about 1 glass of water. Skip the sugar because the sponge cake is already quite sweet.

4 - Start assembling the mimosa cake: soak the first sponge cake layer with the coffee syrup, pour in half of the cream, repeat with the second layer, pouring in all the cream, and cover the cake. Now, arrange all the sponge cake cubes on the surface and the mimosa coffee cake is ready. Refrigerate for at least an hour before serving. If desired, sprinkle with
some icing sugar.
