How to make delicious coffee cookies

Coffee cookies are delicious, quick and easy to make. To make them even more delicious, we can shape them into coffee beans. Perfect for breakfast, a snack, or any time of day, these cookies can be dunked in a hot drink or eaten plain. They only require a few ingredients, like butter, flour, and eggs, which are sure to be a staple in any pantry.

The process is very simple: just mix all the ingredients in a single bowl and, without using a rolling pin, you can easily shape the cookies using just your hands! A secret: by tossing them in sugar before baking, they will be very crumbly on the outside and beautiful to look at. The inside will remain soft and the cookies will melt in your mouth, releasing all the rich and unique flavor of the coffee.

Tip: Make plenty of them, they will stay soft for a long time and will retain their typical aroma just like freshly baked.

Ingredients for 30 biscuits:

Coffee at room temperature: 60 ml
00 flour: 370 g
Sugar: 120 g
Soft butter: 120 g
Egg yolks (of one medium egg) 1
Baking powder: 6 g
To decorate
Sugar: to taste
Powdered sugar: to taste

Preparation

1) To prepare the delicious coffee biscuits, place the butter and sugar in a bowl and work everything together with a wooden spoon until you obtain a soft and creamy mixture.
2) First add the egg, then mix, and when it's absorbed, add the yolk. Mix again and add the lukewarm coffee.
3) Add the remaining ingredients and the flour. Stir again to incorporate the flour.
4) Finally, add the yeast and mix one last time. Cover with plastic wrap and let rest in the refrigerator for half an hour.
5) Then, take the dough and form it into walnut-sized balls. If desired, you can shape the dough into coffee bean shapes (the typical oval shape with a vertical cut in the center). Then, roll them first in granulated sugar and then in powdered sugar.
6) Arrange them one by one on a baking sheet lined with parchment paper, spacing them apart. Bake in a preheated oven at 160°C (320°F) for 15 minutes. Remove from the oven and let cool before serving.



Conservation

Coffee cookies will keep in a tin for a week. The dough can be prepared the day before. Just keep it refrigerated and covered with plastic wrap.

For cookies with a more intense flavor, we recommend the Caffè Negro Gusto Forte blend. If you prefer a more delicate flavor, try the 100% Arabica or Aroma Bar blend. For those with a sweet tooth, add dark chocolate chips to the dough to make the cookies even more irresistible.
